I've been trying to think of places that we can go on a weekend. One day activities are perferable, but over night trips might be possible. I think a 5 hour one way drive is all we can make in one day and get a decent activity in. That gets us to the DFW area to the south and Kansas City to the north. Here is a list of places I know of that might be possible.
